Christmas Ornament Appetizer

Ingredients
INSTRUCTIONS
-
1Slice the sides off of the colorful bell peppers. Trim the insides so that it’s a little more flat and even. Turn it over, and use a 1 inch and 11⁄2 inch star cookie cutter to cut stars out of the different colors. You will want 9 of each size star making 18 total, mix and match the colors how you like.
-
2Add the whipped cream cheese to a piping bag with a star shaped end. Pipe the whipped cream cheese onto a rice cracker in a thin, pretty layer.
-
3Press a larger star onto the cream cheese. Add a small amount of cream cheese to the center of the big star, and add a smaller star on top. Repeat with others and serve. (Save the cream cheese in the piping bag for the wreaths.)
-
4Slice the mini peppers into rings, and remove and seeds.
-
5Pipe the cream cheese in a thin, pretty layer onto 9 rice crackers.
-
6Place the sliced peppers in the center. Carefully place 2 pink peppercorns at the bottom of the slice, then carefully place 2 small parsley leaves below them, using their little stems to stick securely into the cheese. Repeat for all crackers. It can be helpful to use a toothpick or cocktail pin to more easily place the peppercorns and parsley leaves.
-
7If you have a 1-inch square cookie cutter use that to spoon about 11⁄2 tsp. herbed goat cheese into the cookie cutter, and evenly fill it to the sides. Pressing down to fill to the space and gently ease the cookie cutter up leaving a square, then transfer to a rice cracker. If you don’t have a small square cookie cutter just use a knife to create a square shape pressing the goat cheese to stay together before transferring to a rice cracker. Continue until you have 10 squares of the goat cheese of the crackers
-
8Use kitchen scissors to cut a chive into 2 pieces that are the length of the square. Lay one down the center, and cut one of them in half, and place on the sides to make a cross.
-
9Carefully, stick a teeny, tiny bit of goat cheese to a pink peppercorn. Place the peppercorn in the center of the chive “ribbon.” It will stick easier than you think it will.
-
10Add 2 tiny parsley leaves on the sides. I find it’s helpful to use a toothpick or cocktail pin to press them into the cheese.
-
11Serve all the appetizers together on a tray.
