Greenhouse bells are typically more uniform in size and shape because they grow in a carefully controlled climate. Field-grown peppers can show more natural variation and sometimes develop slightly thicker walls or deeper sun-kissed color tones thanks to full outdoor sunlight. Whichever you choose, the eating quality is excellent.
It depends on the resource you’re measuring. Field peppers draw free solar energy but rely on larger land footprints and can face higher weather-related losses. Greenhouses often recycle irrigation water and shelter crops from storms, reducing waste, but they use additional infrastructure and, in cooler regions, supplemental energy. We operate both models and keep improving each with targeted water, energy, and soil programs.
Controlled-environment growing delivers near-identical peppers—ideal for retail displays, tray-packs, or grab-and-go snack bags. Field peppers come in a wider range of sizes, which is perfect for food-service operators who dice, slice, or roast in bulk and appreciate the value of mixed grades.
Heavy rain, unexpected frost, or heat spikes can shorten or delay a field harvest. Greenhouses hedge that risk with enclosed structures, meaning we can schedule plantings to cover the weeks when outdoor acreage is between crops.
