Grilled Bell Pepper Tartine





Ingredients
INSTRUCTIONS

1Preheat the grill to medium-high heat. In medium heat safe bowl combine 1 tablespoon of olive oil, the minced garlic, white wine vinegar, and chopped parsley. Whisk to combine to make a marinade.

2Cut each of the colorful bell peppers into quarters, then carefully remove the stems, seeds, and white insides. Add the large quarter cuts of the peppers into the marinade and toss to coat.

3To make the whipped feta add 1 tablespoon of olive oil, feta cheese, cream cheese, and lemon juice to a food processor. Blend until a smooth consistency, stopping to scrape down the sides as needed. Once the consistency is smooth set aside.

4To grill the peppers, take them out of the marinade and let any excess marinade drip off into the bowl. Transfer all of the pieces of the peppers to the grill. Grill 4 minutes before flipping. Grill another 4 minutes. Flipping one more time, grill another 3 to 4 minutes until the peppers are starting to become tender and have nice grill marks, about 12 minutes total. Transfer the peppers back into the bowl with the marinade. Toss the grilled peppers in the marinade, cover, and set aside for at least 5 minutes

5While the peppers are resting toast the slices of bread on the grill. Add all of the slices directly to the grill and grill 1 to 2 minutes until they start to brown. Flip and grill another 1 to 2 minutes on the other side.

6Let the toasts cool slightly before adding a good helping of the whipped feta followed by one or two pieces of the grilled pepper pieces. Enjoy immediately!
