Grilled Mini Peppers with Mint Tzatziki

    Preheat your grill to medium-high.

    Finely grate the cucumber onto a clean kitchen towel or double lined paper towel. Over the sink squeeze the cucumber in the towel to get rid of any excess liquid.

    In a small bowl combine the greek yogurt, mint, drained cucumber, lemon juice, and garlic to make the mint tzatziki.

    In a mixing bowl toss the peppers with the olive oil and a few pinches of kosher salt and some freshly cracked black pepper.

    Grill the peppers for 4 to 5 minutes, or until they're soft and have nice grill marks on them, turning once halfway through.

    Serve the grilled peppers right away with the mint tzatziki on the side. Don't worry about the seeds when you eat them. Just pick the pepper up by the stem and eat the whole thing (minus the stem).
