Roasted Bell Pepper Puff Pastry Bites





Ingredients
INSTRUCTIONS

1Preheat oven to 425°F. Add the chopped bell peppers, olive oil, and Italian seasoning to a baking/casserole dish. Toss well. Transfer to the oven and bake 15 minutes.

2Remove from oven and let the peppers cool down about 10 minutes.

3Meanwhile unwrap the thawed puff pastry sheets on a clean work surface. And carefully cut each sheet into 12 pieces. Lightly grease 2 muffin pans and add a piece of puff pastry to each muffin cavity.

4Add the crumbled feta cheese in the with peppers and toss together. Add a heaping tablespoon of the pepper mixture to each puff pastry.

5Turn oven down to 400°F and transfer the muffin pan(s) to the oven*. Bake 12 to 14 minutes until the puff pastry is golden brown. Let the puff pastry pepper cups rest 3 to 5 minutes before using a butter knife to gently remove them from the muffin pan before serving.
