Bell Pepper Pumpkins
Ingredients
INSTRUCTIONS

1Preheat oven to 375° F.

2Cut the tops off the orange bell peppers and take out the seeds and insides. Very carefully with a paring knife make a jack o’lantern face in each pepper. Add to a baking dish and set aside.

3Heat a large skillet over medium-high heat. Add in the ground beef and crumble, cook 3 minutes.

4Add the diced onion to the skillet and cook 3 to 4 minutes until they start to soften.

5Add the minced garlic and Cajun seasoning to the skillet and cook another 1 minute.

6Drain the skillet if needed before adding the Worcestershire sauce, tomatoes (with the juices), broth, and rice to the skillet. Mix everything together well and cover and bring to a boil. Reduce heat to medium-low for a simmer, stir and cover again cooking 10 minutes.

7Scoop the stuffing into each of the bell peppers until they are full. Place the tops back on the peppers.

8Carefully cover the casserole dish with aluminum foil and transfer to the oven. Bake covered for 45 minutes. Uncover and check the peppers. Cook longer if needed. Let rest 5 minutes before serving.
