Mini Pepper Salad





Ingredients
INSTRUCTIONS

1To a small bowl add the apple cider vinegar, olive oil, salt, and dried basil. Whisk together to create a dressing.

2Remove the top and stem from the mini peppers and scoop out any seeds. Thinly slice the mini peppers into rings and add to a large bowl.

3Add the thinly slice red onion, pumpkin seeds, and crumbled feta to the bowl with the peppers.

4Drizzle on the dressing. Toss well. Serve immediately or the salad can be made in advance just keep in an airtight container in the fridge.
