Ingredients

INSTRUCTIONS

    To a small bowl add the apple cider vinegar, olive oil, salt, and dried basil. Whisk together to create a dressing.

    Remove the top and stem from the mini peppers and scoop out any seeds. Thinly slice the mini peppers into rings and add to a large bowl.

    Add the thinly slice red onion, pumpkin seeds, and crumbled feta to the bowl with the peppers.

    Drizzle on the dressing. Toss well. Serve immediately or the salad can be made in advance just keep in an airtight container in the fridge.
