Rainbow Veggie Pinwheels





Ingredients
INSTRUCTIONS

1Slice the colorful bell peppers into thin strips.

2Spread hummus out on one side of each of the tortillas. Add a layer of spinach to half of the hummus covered tortilla. Add a small handful of the shredded red cabbage over the spinach.

3Add the slices of the red, orange, and yellow bell peppers spread out across the tortilla.

4Starting at the bottom of the tortilla with the spinach roll the tortilla up. Use a serrated knife to cut the rolled up tortilla into 1 inch pieces to make 3-4 rainbow veggie pinwheels.
